1 medium head of cauliflower (more recipes)
2 tablespoons rice vinegar (more recipes)

For the sushi rolls:
4 nori seaweed sheets (more recipes)
1/2 cucumber, julienned (more recipes)
1 carrot, julienned (more recipes)
1 avocado, sliced (more recipes)
4 ounces (about 120g) cooked crab meat or smoked salmon (optional) (more recipes)
Pickled ginger, for serving (more recipes)
Wasabi, for serving (more recipes)
Soy sauce or tamari, for serving (more recipes)

  1. Prepare the cauliflower rice by cutting the cauliflower into florets. Place the florets in a food processor and pulse until they resemble rice grains.
  2. Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 4-5 minutes, or until tender. Alternatively, you can steam the cauliflower rice on the stovetop until tender.
  3. Once cooked, transfer the cauliflower rice to a mixing bowl. Add the rice vinegar, honey (if using), and salt to taste. Mix well to combine. Set aside to cool.
  4. Place a nori seaweed sheet shiny side down on a bamboo sushi mat or a clean kitchen towel.
  5. Spread a thin layer of cauliflower rice evenly over the nori sheet, leaving about 1 inch of space at the top edge.
  6. Arrange the julienned cucumber, carrot, avocado slices, and cooked crab meat or smoked salmon (if using) in a line across the center of the cauliflower rice.
  7. Using the bamboo sushi mat or kitchen towel, tightly roll the nori sheet over the filling, starting from the bottom edge. Continue rolling until you reach the top edge, sealing the roll by moistening the edge with a bit of water.
  8. Repeat the process with the remaining nori sheets and filling ingredients.
  9. Once all the rolls are assembled, use a sharp knife to slice each roll into 6-8 pieces.
