2 tablespoons coconut oil or olive oil (more recipes)
1/2 large onion, diced small (about 1 cup) (more recipes)

1/2 Rotisserie chicken (breast/thigh/drumstick meat pulled off and torn into shreds or diced, about 400-500 g /1 lb) (more recipes)
1-2 large leaves of bok choy or other greens, diced or sliced (about 1-2 cups) (more recipes)
1/2 medium head of cauliflower, cut into small florets (instead of broccoli) (more recipes)
6 cups chicken bone broth or chicken broth (more recipes)
If using noodles: About 100 grams (3-4 oz) sweet potato noodles or zucchini noodles.  (more recipes)

instructions

1. In a large pot, heat coconut oil over medium heat. Add diced onion, carrot, and celery. Cook until vegetables are softened, about 5-7 minutes.
2. Add minced garlic, ginger slices, salt, and turmeric powder (if using). Stir and cook for an additional 1-2 minutes until fragrant.
3. Add shredded or diced rotisserie chicken to the pot. Cook for 3-4 minutes until the chicken is heated through.
4. Stir in diced bok choy or other greens and cauliflower florets.
5. Pour in the chicken bone broth or chicken broth. Bring the soup to a simmer and let it cook for about 15-20 minutes until the vegetables are tender.
6. If using noodles, cook them separately according to package instructions. Add the cooked noodles to individual serving bowls.
7. Ladle the hot soup over the noodles or serve it as is. Adjust seasoning if necessary.
